Black Beans, Bananas, and Quinoa
  • ½ cup Quinoa
  • 1 cup of cooked, low sodium black beans, rinsed and drained
  • ¼ banana, finely chopped
  1. Rinse the quinoa under cold running water and drain well. This helps remove any bitterness left in the quinoa. In a small sauce pan combine the quinoa with 1 cup of water and bring to a boil over high heat. Reduce to low heat, cover and simmer gently until the liquid is absorbed and the grains are soft and translucent, about 20 minutes. Let stand covered for 10 minutes.
  2. Meanwhile, heat the black beans in a small sauce pan over medium heat and mash some or all with a fork to consistency your baby is able to handle. Fluff the quinoa with a fork and stir in the mashed beans. Spoon the quinoa mixture onto a plate and top with the chopped bananas. Serve lukewarm or at room temperature.
  3. **Refrigerate leftovers in an air-tight container for up to 3 days OR freeze in individual portions for up to 3 months in your freezer.
