Peach Caprese Salad
I am here today to answer the age old question…what the heck do you serve with a big ol’ bowl of pasta? The usual is a side salad, but if I am going to cook my way through 50 pasta recipes we are going to have to mix it up. Don’t you agree?
So allow me to introduce you to the first of many side dishes I have concocted to accompany these delicious pasta dishes. First up, the Peach Caprese- a suprising twist on an old favorite and pretty easy to throw together at the last minute. Let’s take a look…
Dice your peaches and mozzarella cheese. Fresh is always better so I do suggest for this recipe that you use fresh peaches and fresh mozzarella. However, if you don’t happen to have fresh mozzarella hanging around your fridge the mozzarella block would work fine as well.
Toss together the peaches, mozzarella, basil and some balsamic vinegar in a bowl. Season with salt and pepper to taste and voila you have Peach Caprese Salad just like that! Hope you didn’t blink…you may have missed it!
This recipe is the perfect illustration of something so simple yet tasting so decadent! You could even mix it up in your presentation. You can skewer the ingredients and serve as an appetizer kabob or serve on top of a crostini.
I would even take it to the next level and mix up the ingredients based on seasonality. This recipe really has no end in sight for possibilities so go ahead and have fun with it!

- 2 Peaches cut into ½ inch pieces
- 4oz Mozzarella Cheese cut into ½ inch pieces
- 2 Tbs Fresh Basil
- 1 Tbs Balsami Vinegar
- In a medium bowl toss all the ingredients together. Stir till well combined. Let the mixture sit for about 30 minutes. Serve immediately
